Ingrédients

  • For the cookie roll :
  • 4 eggs

  • 120 g sugar

  • 100 g flour

  • 1 teaspoon baking powder

  • A pinch of salt

  • For the lemon-cardamom cream :
  • 3 lemons (zest and juice)

  • 150 g sugar

  • 3 eggs

  • 150 g sweet butter

  • 4 cardamom pods

  • For decoration :
  • 50 g powdered sugar

  • Candied lemon peel

  • Slivered pistachios or almonds

Instructions

  • Prepare the cookie roll :
    Preheat oven to 180°C.
    Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt until stiff. In a separate bowl, whisk the yolks with the sugar until the mixture whitens.
    Gently fold in the sifted flour and baking powder, then fold in the stiffly beaten egg whites.
    Spread the dough on a baking sheet lined with baking paper and bake for 10 minutes.
  • Prepare the lemon-cardamom cream :
    In a saucepan, heat the lemon juice, zest, sugar and seeds extracted from the cardamom pods.
    Beat the eggs in a bowl and add to the saucepan. Stir constantly over medium heat until thickened.
    Remove from the heat and stir in the diced butter. Leave to cool completely.
  • Assemble the log :
    Once the cookie has cooled, turn it out onto a clean, damp kitchen towel. Spread the lemon-cardamom cream over the entire surface, then gently roll the cookie on itself.
    Wrap the log in cling film and refrigerate for at least 4 hours.
  • Decorate and serve :
    Dust the log with powdered sugar, and add candied zest and pistachio slivers for a festive touch.
