Ingrédients
- For the marinated chicken :
4 chicken fillets
2 lemons (zest and juice)
2 garlic cloves, chopped
3 c. tablespoon olive oil
1 c. teaspoon honey (optional for a sweet touch)
1 c. coffee dried oregano
1 c. tablespoon chopped fresh parsley
Salt and pepper
- For steamed vegetables:
200 g broccoli
200 g carrots
200 g green beans
1 drizzle with olive oil to serve
Instructions
- Preparation (10 minutes)
- In a large bowl, combine the lemon juice and zest, chopped garlic, olive oil, honey, oregano, parsley, salt and pepper.
- Add the chicken fillets to the marinade. Cover and marinate in the fridge for 30 minutes to 2 hours (longer for more intense flavours).
- Cooking time (20 minutes)
- Preheat a grill pan or barbecue.
- Drain the chicken and cook for about 4-5 minutes on each side, until golden brown and cooked through (internal temperature should reach 75°C).
- Meanwhile, steam the vegetables for 8-10 minutes until tender-crisp.
- Dressage and Service
- Arrange a grilled chicken fillet on a plate, accompanied by the steamed vegetables. Drizzle with olive oil and garnish with fresh parsley. Serve immediately.
Notes
- Add a pinch of Espelette pepper to the marinade for a spicy touch.
- Serve with a garlic and lemon yoghurt sauce for extra creaminess.
