Ingrédients
300 g cooked rice (leftovers)
50 g grated cheese (Parmesan or Emmental)
1 egg
2 tbsp. breadcrumbs (more for coating)
1 garlic clove finely chopped (optional)
2 tbsp. chopped fresh parsley
Salt and pepper to taste
Olive oil or a spray of cooking oil
Instructions
- Prepare the kibble base:
In a large bowl, mix the cooked rice with the grated cheese, egg, breadcrumbs, garlic and parsley.
Season with salt and pepper.
Work the dough by hand or with a spatula until smooth. If the mixture is too wet, add a little more breadcrumbs. - Shape the croquettes:
Take a small amount of the mixture and shape your hands into pellets or oval shapes.
Roll each croquette in a little breadcrumbs to make a nice breading. - Cook the croquettes:
At the Airfryer: Arrange the croquettes in a single layer in the basket. Spray lightly with oil. Bake at 200°C for 8 to 10 minutesTurn halfway through cooking to ensure even browning.
Pan-frying : Heat a drizzle of olive oil. Cook the croquettes over medium heat until golden-brown on both sides. - Serve hot:
Serve your croquettes with yoghurt sauce, homemade ketchup or a spicy dip.
