Ingrédients

  • 8 eggs

  • 1 bell pepper (red, green or yellow), diced

  • 2 medium tomatoes, diced

  • 1 medium onion, finely chopped

  • A few sprigs parsley or chives, finely chopped

  • Salt and pepper to taste

Instructions

  • Preparation of ingredients : Start by chopping the vegetables. Peppers, tomatoes and onions should be cut into small pieces for even cooking. Finely chop the parsley or chives to add flavor and decoration to the omelet.
  • Beat the eggs: In a large bowl, break the eggs and beat with a fork or whisk until smooth and slightly frothy. Add a pinch of salt and pepper to taste, then mix again.
  • Cooking vegetables : Heat a large non-stick frying pan over medium heat and add a tablespoon of butter or oil. Once the pan is hot, add the onion and bell pepper and sauté for 3-4 minutes, until tender. Add the diced tomatoes and cook for a further 1-2 minutes. Remove the vegetables from the pan and set aside in a bowl.
  • Cooking the omelette : Add a little butter or oil to the pan again. Pour the beaten eggs into the hot pan and cook gently, stirring the edges to keep the omelette soft.
  • Add the vegetables and cheese: When the omelette starts to set but is still slightly runny in the center, add the sautéed vegetables evenly to one half of the omelette. Sprinkle with grated cheese, which will melt in the heat of the omelette.
  • Fold and finish cooking Fold the omelette gently in half to enclose the filling. Cover the pan with a lid and cook for a further 1-2 minutes over low heat, until the cheese has melted and the omelette is heated through.
  • Serve Once ready, place the garnished omelette on a serving plate. Sprinkle with freshly chopped parsley or chives for a finishing touch. Cut into four equal slices and serve immediately, accompanied by a green salad or fresh bread.
