Ingrédients

  • For pasta :
  • 400 g spaghetti

  • 150 g pancetta or smoked bacon

  • 2 whole eggs + 2 yolks

Instructions

  • Prepare the Parmesan potato chips: Preheat your oven to 200°C. Place small heaps of grated Parmesan on a baking sheet lined with parchment paper. Flatten them slightly. Bake for 5-7 minutes, until golden and crisp. Leave to cool.
  • Cook the pasta: Cook the spaghetti in a large pot of boiling salted water, according to package directions. Drain, reserving a ladleful of cooking water.
  • Prepare the basil cream: Blend the cream, basil leaves, garlic and olive oil until smooth and fragrant. Set aside.
  • Cooking the pancetta: Brown the pancetta or lardons in a hot pan until golden and crisp.
  • Mix the eggs and Parmesan: In a bowl, combine the eggs, yolks and grated Parmesan. Add a good pinch of black pepper.
  • Assemble the carbonara: Add the drained spaghetti to the pan with the pancetta. Remove from the heat, then pour in the egg-parmesan mixture. Mix quickly to coat the pasta without cooking the eggs. If necessary, add a little pasta cooking water to obtain a creamy texture.
  • Presentation: Divide pasta among plates. Add a drizzle of basil cream on top. Garnish with crispy Parmesan potato chips and a few fresh basil leaves.

Notes

  • Vegetarian variation: Replace the pancetta with sautéed mushrooms for a meatless version.
