2 large cooked beets, finely diced
2 ripe avocados, finely diced
150 g fromage frais (goatu0027s cheese or Saint-Morêt)
1 tablespoon lemon juice
2 tablespoons olive oil
Salt and pepper to taste
Chopped chives or radish sprouts (for decoration)
Instructions
- Prepare the diced beet :
Place the diced beet in a bowl. Drizzle with a tablespoon of olive oil, and add a pinch of salt and pepper. Mix gently. - Prepare the avocado cubes :
In a separate bowl, toss the diced avocado with the lemon juice (to prevent darkening). Season lightly with salt and pepper. - Prepare the layer of fromage frais :
Soften the fresh cheese with a fork and a tablespoon of olive oil. Season lightly with pepper and blend until creamy. - Assemble the tartare :
Using a round cookie cutter, place a layer of beet on top and gently press down. Add a layer of avocado, then a layer of fresh cheese. Repeat for each serving.
