600 g cherry tomatoes
150 g crumbled feta cheese
1 puff pastry ready to unroll (approx. 250 g)
1 tbsp. brown sugar
2 tbsp. balsamic vinegar
1 tbsp. olive oil
1 tsp. fresh or dried thyme
Salt and pepper to taste
Instructions
- Prepare the tomatoes:
Preheat oven to 200°C.
Heat the olive oil in an ovenproof pan. Add the brown sugar and balsamic vinegar. Stir until slightly syrupy.
Arrange the cherry tomatoes tightly in the pan, then sprinkle with thyme, salt and pepper. Simmer over low heat for 5 minutes, until they begin to caramelize. - Add the feta cheese:
Spread the crumbled feta evenly over the tomatoes. - Add the puff pastry:
Unroll the puff pastry and place it on top of the tomatoes and feta, tucking the edges inside the mold.
Prick the dough lightly with a fork to prevent it from puffing up too much during baking. - Bake the tart:
Bake for 25 minutes or until golden brown and crisp. - Turn out and serve:
Once cooked, let the tart rest for 5 minutes before carefully turning it out onto a serving dish.
Serve warm or hot, with a green salad for a complete meal.
