Goat’s cheese and spinach lasagne revisits this classic dish with a fresh, gourmet twist. This version combines generous layers of creamy béchamel sauce, fragrant spinach and creamy goat’s cheese, all sandwiched between melting lasagne sheets. Ingrédients

  • For lasagne :
  • 12 pre-cooked lasagne sheets

  • 400 g fresh or frozen spinach

  • 250 g fresh goat’s cheese

  • 100 g grated cheese (such as Emmental or mozzarella)

  • 2 garlic cloves, chopped

  • 1 tablespoon olive oil

  • 1 pinch nutmeg

  • Salt and pepper to taste

  • For the béchamel sauce :
  • 50 g butter

  • 50 g flour

  • 600 ml ml milk

  • Salt and pepper to taste

Instructions

  • Prepare the spinach :
    Heat the olive oil in a frying pan. Add the chopped garlic and sauté for a few seconds.
    Stir in the spinach and cook until just tender. Season with salt, pepper and a pinch of nutmeg. Drain if necessary to remove excess water.
  • Prepare the béchamel sauce :
    Melt the butter in a saucepan over medium heat. Stir in the flour to form a roux.
    Pour in the milk gradually, whisking to avoid lumps. While stirring, thicken the sauce. Season with salt and pepper.
  • Assemble the lasagne :
    Preheat oven to 180°C.
    In a rectangular dish, spread a thin layer of béchamel sauce. Arrange a first layer of lasagne sheets.
    Add a layer of spinach, sprinkle with chunks of goat’s cheese, and cover with béchamel sauce.
    Repeat until all ingredients are used up, finishing with a layer of béchamel sauce and grated cheese.
  • Cooking lasagne :
    Bake for 30 to 40 minutes, until the top is golden and au gratin.
  • Serve :
    Leave to rest for 5 minutes before serving to facilitate cutting.
