Ingrédients
2 medium -sized zucchinis
150 g fresh spinach
1 onion
2 garlic cloves
1 liter vegetable stock
1 c. tablespoon olive oil
Juice of half a lemon
Zest of one lemon (optional)
Salt and pepper to taste
5 10 drops CBD oil (depending on your preferred dosage)
Instructions
- Prepare the vegetables: Wash and slice the zucchinis. Peel and chop the onion and garlic.
- Bringing back : Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic, then sauté for 2-3 minutes until translucent.
- Cooking vegetables : Add the zucchini slices to the pan and mix well. Pour in the vegetable stock and bring to the boil. Simmer over low heat for 10 minutes, until the zucchinis are tender.
- Stir in the spinach: Add the spinach to the soup and cook for 2 minutes, just until softened.
- Blend the soup: Using an immersion blender, blend the soup until smooth and velvety.
- Season and add CBD: Remove from heat, add lemon juice and season with salt and pepper. Pour a few drops of CBD oil into each bowl before serving.
Notes
- Add pumpkin seeds or toasted slivered almonds on top for a little crunch.
- For a creamier version, add a spoonful of plain yoghurt before blending.
