Ingrédients
400 g fresh or canned pineapple (drained)
150 g powdered sugar
100 g flour
100 g melted butter
3 eggs
1 sachet of baking powder (approx. 10 g)
1 teaspoon vanilla extract
A pinch of salt
Instructions
- Preparing the pineapple: If you’re using fresh pineapple, cut it into small pieces after peeling. If using canned pineapple, drain well to avoid excess liquid.
- To prepare the dough: In a large mixing bowl, whisk the eggs with the sugar until the mixture whitens and becomes creamy. Add the melted butter and vanilla extract, then mix well. Gradually add the flour, baking powder and salt, mixing until smooth.
- Assembly: Preheat oven to 180°C (gas mark 6). Butter and flour a cake tin, or use parchment paper to prevent the cake from sticking. Arrange the pineapple pieces in the bottom of the tin, or mix them directly into the batter, as you prefer. Pour the mixture over the pineapple in the tin.
- Baking time: Bake for 35 to 40 minutes, until the blade of a knife inserted in the center of the cake comes out clean.
- To unmold and serve: Let the cake cool slightly before unmolding. Serve warm with a scoop of vanilla ice cream, or cold with light whipped cream for an extra gourmet touch.
Notes
- Gourmand Addition: Add a pinch of grated coconut to the batter for an even more tropical taste.
- Caramelization: Before pouring the batter, caramelize the pineapple pieces with a little butter and sugar in a frying pan for a gourmet effect.
